Bicolanos, particularly residents of Naga City, have relished "Kinalas" since the 1980s, making it a staple for breakfast, lunch, dinner, snacks, and even as a remedy for hangovers. To introduce a fresh and improved version of "Kinalas" and boost sales, MINGTENG'S KINALAS (The Original Kinalas) made an innovation by incorporating pan-roasted pork (Lechone Kawali) into the traditional recipe. This innovation transformed the regular "Kinalas" into a customer favorite, as they not only enjoyed the satisfying crunch of the pan-roasted pork but also appreciated the generous servings and flavorful brown sauce it offered.

MingTeng's Kinalas

"Kinalas" is the famous version of mami which is known in Bicol regions, especially in Naga City where most of the "Kinalas" are located at Dayangdang St. wherein the locals named it (Home of Kinalas). MingTeng's Kinalas is a delightful and satisfying noodle soup with tender beef or pork sourced from the meaty regions around the face or leg. Optionally, it can be accompanied by beef or pork's brain or eyes upon request, all served with a flavorsome brown sauce and of course, the innovative addition of pan-roasted pork which made MingTeng's Kinalas a customer favorite.

Business Name and History

Beneath the Colgante Bridge, a husband and wife, Remidios Pelagio and Vicente Pelagio pioneered the Kinalas venture. Their warm and hospitable service, along with the renowned Kinalas recipe dating back to the 1980s, has made a lasting impact on numerous individuals, particularly their dedicated patrons, who still reminisce about the distinct flavors and the story of their modest beginnings under the bridge. as time passed, in 2021, their grandchildren took over. They revitalized the Kinalas business by infusing it with a fresh approach, incorporating pan-roasted pork (Lechon Kawali) into the recipe, and to honor the grandparents' legacy, the brand name of the food house came from combining the affectionate nicknames of their grandparents, "MING" and "TENG", and officially branding it as "MingTeng's Kinalas (The Original Kinalas)".
